This weekend when we were all together, we camped out outside of Trujillo and cooked the traditional Peruvian dish, pachamanca. Pachamanca is cooked in the ground. We heat up stones and then put the stones and food in the ground and bury it all for about 2 hours. It is a kinda weird concept to eat food from the dirt, but it turns out really delicious.
